Cyanidin-3-O-glucoside

An anthocyanin (the 3-O-glucoside of cyanidin) that is the dominant blue-purple pigment of elderberries and many dark berries; a well-studied dietary antioxidant.

Classification

Cyanidin-3-O-glucoside is one of the anthocyanins, part of the phenolics class. Antioxidant compounds built around one or more phenol rings — the flavonoids, tannins, phenolic acids, coumarins, and pigments behind much of a plant's protective chemistry.
