Matesaponins
A group of ursolic-acid-based triterpene saponins specific to Yerba Mate (Ilex paraguariensis), studied for anti-inflammatory, cholesterol-lowering, and antiparasitic effects; they contribute mate’s bitterness.

Matesaponins are saponins, part of the terpenoids class. The largest class of plant compounds, built from five-carbon isoprene units — the essential-oil aromatics, resins, bitter principles, saponins, and plant sterols.
