1-Octen-3-one is a volatile unsaturated ketone known for its extremely low odor threshold and its characteristic metallic, mushroom-like smell. It is a notable contributor to the aroma of mushrooms and certain other foods and is also associated with the metallic odor sometimes perceived on skin or in stored foods, where it forms through lipid oxidation. It is studied mainly as a flavour and aroma compound.
