2,4-Dithiapentane is a volatile organosulfur compound (a dithioacetal of formaldehyde) that is a dominant contributor to the distinctive aroma of truffles. It is widely used as the key odorant in synthetic “truffle oils,” which typically rely on this compound rather than on actual truffle to deliver the characteristic scent and flavour.
