Acetyleugenol (eugenyl acetate) is the acetate ester of eugenol and a constituent of clove and clove oil. It contributes to the warm, spicy aroma of clove and is used as a fragrance and flavouring component. Its profile is closely related to that of eugenol, the more abundant and better-studied parent compound.
