Alliin
A sulfur-containing amino-acid derivative (S-allyl-L-cysteine sulfoxide) that is the odourless precursor to garlic’s pungent compounds; when garlic is crushed, the enzyme alliinase converts it into allicin.
Classification
Alliin is one of the other constituents. Compounds outside the major chemical classes — nucleosides, simple amines, mixed volatile oils, and as-yet uncategorised constituents.
