Cohumulone

Cohumulone is one of the alpha acids of hops that contribute bitterness to beer.

Where Does It Come From? (1)

Cohumulone is a naturally occurring alpha acid (prenylated phloroglucinol), found in Hops. It is well tolerated orally (low toxicity).

Research & Evidence

Cohumulone is one of the alpha acids of hops, the group of compounds that, after isomerisation during brewing, provide much of the bitterness in beer. It is an analogue of humulone, differing in one of its side chains. The proportion of cohumulone among a hop variety’s alpha acids is one of the characteristics brewers consider when selecting hops, as it can influence the quality of bitterness.

Toxicity & Safety

Cohumulone is consumed as part of hops and beer and is not regarded as notably toxic at these levels. A detailed isolated-compound safety profile has not been well characterised.
