Cyanidin-3-sophoroside

An anthocyanin pigment (cyanidin bound to the disaccharide sophorose) that contributes to the red colour of hibiscus and black raspberry; an antioxidant flavonoid.

Classification

Cyanidin-3-sophoroside is one of the anthocyanins, part of the phenolics class. Antioxidant compounds built around one or more phenol rings — the flavonoids, tannins, phenolic acids, coumarins, and pigments behind much of a plant's protective chemistry.
