Piperonal

Piperonal (heliotropin) is a fragrant aldehyde with a sweet floral, cherry-like scent used in flavours and perfumes.

Where Does It Come From? (2)

Piperonal is a naturally occurring benzaldehyde derivative (methylenedioxy aldehyde), found in Vanilla and Black pepper. It is well tolerated orally (low toxicity).

Piperonal, also called heliotropin, is an aromatic aldehyde with a sweet, floral, cherry-vanilla scent, occurring naturally in vanilla and a number of other plants. It is used mainly as a flavouring and fragrance ingredient. It is not psychoactive in itself, though it is chemically related to the methylenedioxy building blocks of some other compounds.
