Vanillin
The principal aromatic compound of cured vanilla pods, a phenolic aldehyde responsible for vanilla flavour and aroma and possessing antioxidant activity.
Classification
Vanillin is one of the phenolic acids, part of the phenolics class. Antioxidant compounds built around one or more phenol rings — the flavonoids, tannins, phenolic acids, coumarins, and pigments behind much of a plant's protective chemistry.
